It is located on 120 pristine acres in the Pacific Redwood Forest with a private lake and garden. NewTree Ranch practices a regenerative-ethical-ecological approach to agriculture, plant-based nutrition and wellness. The ranch is sustainable and operated by its own power sources, water and fresh produce from the biodynamic garden. A highlight of any stay at NewTree is the plant-based culinary program. NewTree Ranch Executive Chef

The Executive Chef should be comfortable working with farm-fresh ingredients while working in conjunction with the head farmer in regards to what should be grown during the upcoming seasons to highlight the seed-to-table culinary program at the Ranch. The chef should be able to focus on the hyper-local, seasonal produce grown on the estate stoking the chef’s creativity to showcase the vibrancy of our homegrown food. The cuisine should be a reflection of NTR’s values of nourishing our guests with eye-popping, mouth-watering healthy dishes that shine with the abundant vitality, life- giving nature of the farm. The chef should also be happy to work in the gardens when time allows to bring that connection of the farmers and the land to our guests. Plus, there is nothing like getting your hands dirty.

Job Summary

Essential Functions - Responsible for all food production, including pre-packaged items sold on ranch. Develop menus, food purchase specifications and recipes. Supervises production staff. Develop and monitor food and labor budgets for the department. Maintain highest professional food quality and sanitation standards.

Executive Chef Responsibilities

  • Working closely with the founders to develop and grow the culinary program to be in line with the New Tree Ranch Vision and Mission.

  • Managing the New Tree Ranch kitchens, pantries, food storage, and dining facilities. Working with the farmers to plan and execute seasonal menus and meal services. Overseeing and executing meal services for guest stays and special events.

  • Designing seasonally appropriate, vegetable-forward, plant based menus and beautifully presented dishes; based on the produce available on the farm and locally sourced ingredients.

  • Creating and documenting simple and refined recipes that delight the customers, and can be reproduced consistently for the entire season.

  • Ensuring promptness, freshness, and quality of dishes.

  • Managing the guest kitchens and pantries to ensure guests have everything they need to easily utilize the incredible produce grown on the farm.

  • Implementing food safety and hygiene policies

  • Examining equipment and kitchen facilities for cleanliness.

  • Reviewing staffing levels to meet service, operational, and financial objectives. Performing administrative tasks, taking stock of food and equipment supplies, doing purchase orders, and shopping as needed.

  • Setting and monitoring performance standards for staff.

  • Obtaining feedback on food and service quality, and handling customer problems and complaints.

Executive Chef Requirements

  • 2+ years of culinary education.

  • 5+ years of experience in a similar position.

  • Experience with whole foods plant-based cuisine.

  • Knowledge of farm-to-table cuisine and seasonal menu planning

  • Advanced knowledge of food professional principles and practices.

  • Proficient knowledge of human resources management.

  • Excellent knowledge of BOH systems, ordering and inventory.

  • Excellent communication skills.

  • Ability to meet tight deadlines and manage multiple daily meal services.

  • Available to work on-call, shifts, after hours, over weekends, and on public holidays.
