Be a part of one of the most exciting hospitality openings to happen in 2020! Patina Restaurant Group and Iron Chef Morimoto are collaborating once again opening the most anticipated Momosan in Boston. Joining us at The Hub on Causeway as the only full-service restaurant located in Hub Hall.

At the 3,000 square foot Momosan Boston, noodles will be front and center, highlighting Chef Morimoto’s varieties of Japanese-style flavor forward ramen. The menu will also feature a variety of grilled dishes, Japanese bar snacks and sushi, all with Chef Morimoto’s signature twist. Playful small Izakaya plates and appetizers will take guests on a comfort food journey. A vast sake list, including a selection of Chef Morimoto’s signature sake, will be featured along with wine, cocktails, Morimoto signature beers in collaboration with Rogue Ales, Japanese We are looking for an Executive Chef for our Asian Concept opening this Spring at Hub Hall on Causeway. Ideal candidate will have extensive experience in Asian Cuisine including but not limited to ramen, sushi and other similar menu items.

Responsibilities: As an Executive Chef at Momosan, you’ll be responsible for:

  • Work with Chef Morimoto to develop and maintain recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all chefs and cooks are following these standards.

  • Experience in Asian Cuisine such as ramen, japanese classical dishes, sushi and other grilled dishes

  • Hands on cooking. Lead and cook by example and provide guidance to any subordinates.

  • Ensure kitchen operations can run smoothly and efficiently in your absence.

  • Determination of purchasing specifications and budgetary allotments for all menu items.

  • Make periodic and regular inspections of units to observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and employee appearance.

  • Maintain complete knowledge of and compliance with all company policies/service procedures/standards

  • Have a working knowledge of company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control and hiring/counseling/termination policies.

  • Coordinate hiring and training activities for kitchen, and other production and back of house employees while continuously monitoring their performance.

Qualifications: Required Skills and Experience:

  • Minimum 3 years’ experience as a Sous Chef, Executive Sous Chef, Chef De Cuisine or Executive Chef in a restaurant with a similar style of dining, capacity and volume.

  • Servsafe and Food Safety Handler required.

  • Strong financial and computer skills; has experience working with and an understanding of P&L’s and budgeting.

  • Possess a passion for culinary excellence with incredible skill to create exciting new dishes, appropriate for the venue’s concept.

  • Proven ability to direct staff clear and concisely while positively influencing employee behavior and performance.

  • Think quickly, multitask, and adapt to changing situations while maintaining the highest quality of product and other established standards.

  • Ability to navigate and utilize Microsoft Office Suite programs (especially Word, Excel, PowerPoint, and Outlook), & (POS) systems.
